Nishi-Azabu: "Gōryū Kubo"

COMMENT

I don't spare the time it takes to travel and meet producers in person. Whenever an ingredient catches my interest, I contact the producer right away, hear directly from them, and after being shown their fields, I source only the best ingredients I've been convinced of. I believe that the preparation of a dish begins with traveling to the production area and carefully examining the ingredients. I spend half of each month traveling around the country, making dishes with carefully selected ingredients. I'm also particular about water, having it sent from various regions and even sending it for component analysis.
