Coming out of Yotsuya-sanchome subway station and heading toward Yotsuya along Shinjuku-dori, turn in at the third corner and you'll see a building on your right. "Yotsuya Minemura" is on the 2nd floor. Owner Minemura trained extensively at places such as "Minami-Aoyama Ichita," "Sushi Masuda," and "Nihon Ryori Hakuun" before opening the restaurant in September 2023. He went independent while still in his mid-thirties and now runs a restaurant with a large following of fans.

COMMENT
Since I myself am still young, I make a point of communicating with guests so they can talk to me comfortably. I also place great importance on advance prep work, so that hot dishes can be served hot and freshly made food can be brought out smoothly, letting the true quality of the cooking come through.
