A part-time job at a restaurant was what led me into the culinary profession in earnest. This restaurant opened just last June, at the invitation of Tobita Yasuhide, a sommelier who worked alongside me at my previous job. In every dish, I take great care with the balance of color when plating. Japanese cuisine pairs well with wine too, so this time I've prepared a colorful hassun and an ohitashi, a dressed greens dish, that is only in season right now, to enjoy together with delicious wine.

COMMENT
Getting off at Nogizaka subway station and walking along the bustling Akasaka-dori, an undyed, natural-cotton noren curtain comes into view. This is 'Nogizaka Shin.'
