Azabu-Jūban: "Azabu Kadowaki"
COOKING INGREDIENTS
Top Chef Selection ~Pioneers~

Passing through a lively main street where preparations for the autumn festival quietly proceed, we turn into the alley just next door. Glancing over, we notice a building with black board fencing standing quietly. A small Inari shrine is enshrined out front, and a distinctly dignified atmosphere hangs in the air. This is "Azabu Kadowaki."

COMMENT
Food is something that disappears once eaten, so leaving an impression matters more than anything else. It's no good if, after finishing a meal and leaving the restaurant, nothing at all stays in the guest's memory. Ideas for dishes come to me while I'm in the kitchen or looking at ingredients, so I place great importance on actually handling the ingredients myself. Food connects to the whole world — I hear that more and more people, if they want to eat Japanese food, go all the way to Japan, and if they want Chinese food, go all the way to China, to eat it on-site. I think Japan, too, will see even more overseas guests from here on.
