Hints for a dish can turn up even in the places and scenery I pass through in everyday life, and they sometimes spark an idea. Things remain difficult given the coronavirus pandemic, but I want to keep working hard so that we can go on preserving the culture of ryōriya (casual restaurants) and ryōtei (traditional banquet houses).

COMMENT
Kudanshita, a neighborhood not far from the moat of the Imperial Palace. Get off at Kudanshita Station on the subway and slip into a narrow alley to escape the bustle of Yasukuni-dōri, where many cars come and go. Walk a little further and a building with a black board fence comes into view, with a large flower arrangement displayed in front of the entrance — this is 'Kudanshita Jūhaku.'
