I have loved cooking since I was a small child, and watching TV programs made me long to become a sushi chef (itamae). I trained in Ginza, Roppongi, and Ebisu before going independent. I take great care in how I select Edo-style (Edomae) toppings and vinegared rice for each piece, and I want to serve food that can only be had at my restaurant.

COMMENT
The restaurant sits quietly tucked away in a back alley of tranquil Nishi-Azabu. Guests can enjoy exquisite single pieces of sushi, each one carefully crafted down to how the rice is cooked and how the heat is applied to each ingredient.
